Crispy Fish Tacos

I had a craving for fish tacos for about a week before I was finally able to do something about it. These tacos are amazingly yummy with extra crispy beer batter fish and a delicious sauce to top it off. We made these by adapting a recipe I found here.

This was also our first successful main dish dinner made from scratch by Maivy, Lien and Jamie. Mom is always the one to make the main dinner. We can generally make pasta, other simple foods. We can also make practically any type of dessert but meat is something we can't really cook from scratch yet (that's Mom's expert arena). We never deep fried anything by ourselves either so this dinner was really fun to make :)

Ingredients:

1 bag of tilapia fish (2 lbs)
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup beer

1 cup mayonaise
juice of 1 lemon
1 tsp minced capers (optional)
dried oregano
paprika
ground cayenne pepper
garlic salt

1 package of 30 corn tortillas
1/2 head of cabbage
cilantro
salsa

  1. Prepare the taco topping goodies. Finely shred the cabbage. Wash and chop the cilantro.
  2. Make the topping sauce. Measure out about 1 cup of mayonnaise. Whisk in the juice of 1 lemon and add the following spices to your taste: cayenne pepper, paprika, garlic salt, and dried oregano. I wish I had the exact measurements for you but I just mixed stuff into the sauce until it tasted good. I'll try to get the measurements the next time we make fish tacos. Minced capers are optional. The original recipe called for them and I was about to omit them but since I was surprised to find them in my spice cabinet, I added them.
  3. Mix the dry ingredients for the beer batter in a big bowl (flour, cornstarch, baking powder, salt). Mix the egg together with the beer and then quickly stir into the dry flour mixture. It doesn't matter if there are lumps. Mix the batter but don't overdo it because we want the bubbles to stay.
  4. Heat up canola oil in a frying pan.
  5. Cut the fillet into approximately 4 strips. Lightly dust each strip of fish in all purpose flour before dunking it into the beer batter.
  6. After dipping the fish into the beer batter, put it into the hot oil and fry until crisp and golden brown. Drain them on paper towels when they are done and then move them onto a cooling rack to preserve their crunchiness.
  7. Warm the tortillas on a hot frying pan. No need for oil.
  8. To assemble delicious tacos: put some mayo sauce on the taco, place the fish on it, top it with some salsa, the shredded lettuce, and chopped cilantro. Serve with wedges of lemon.

Phở Áp Chảo Chay

Vật liệu gồm có:

Bánh Phở tươi loại lớn

bột nêm nấm , muối , đường , tiêu

3 lon nước soup chay
3-4 Tbsp bột bắp
thêm nước
1 bó rau cải ngọt - cắt khúc luộc sơ
3 trái zuchini
2 củ carrot
Đậu hủ cắt miếng mỏng chiên
2 hoa broccoli
3 cây nấm king oyster
Baro xắt nhỏ

Cắt tất cả các loại rau cải ra thành những miếng vừa ăn

Để chảo lên bếp cho nóng, bỏ chút dầu cho baro vào xào cho thơm rồi cho nấm vào xào sơ, kế đến là carrot, rồi zuchini, broccoli, rau cải rồi đến đậu hủ - nêm nếm 1 chút cho đậm đà hơi lạt 1 chút , tắt lữa

Lấy 1 cái chảo khác, cho nước soup vô và cho thêm 3 lon nước vào nấu sôi, lấy bột bắp cho chút nước vào quậy đều rồi đổ vào nước soup đang sôi, quậy cho thật đều nước phải hơi xền xệt nếu chưa đủ đặc thì cứ cho thêm nước trộn với bột bắp ... khi nước đã xền sệt thì bỏ chảo rau đã xào vào , nêm thêm bột nêm, đường , muối cho vừa ăn , nhớ là nên lạt lạt vừa ăn thôi vì khi ăn sẽ cho nhiều sốt lên bánh phở nếu mặn thì ăn mất ngon, quan trọng là vừa vừa và beo béo .

Bánh phở thì kéo tơi ra, bắc chảo lên bếp cho chút dầu vào rồi đàn bánh phở ra 1 lớp mỏng , chiên cho vàng , giòn - lấy xẻng đẻ bánh phở xuống áp vào chảo

Khi ăn thì để bánh phở vô dỉa rồi đổ sốt cùng rau cải lên

Nếu muốn ăn theo kiểu mì xào giòn thì có vài cách sau đây

Mì nhúng nước sôi theo sự chỉ dẫn để khô ráo

1 là để chảo nhiều dầu rồi khi chảo nóng thì cho mi` vao`, khi mì khô thì lấy ra

2 là cho 1 lớp dầu vừa vào chảo, cho mì và chiên - nhớ lật qua, lại cho mì giòn

3 là lấy 1 cái tray dưới có bọc foil - xịt 1 lớp dầu pam vào rồi trải 1 lớp mì lên, xịt thêm 1 lớp pam nữa rồi bỏ lò nướng ở nhiệt độ 400 F khoảng chừng 20 phút , nhớ lật qua lại và lâu lâu mở lò cho mì bốc hơi , khi mì khô, giòn là được - làm cách này thì mì sẽ không bị hút dầu nhiều

Khi ăn thì cũng để mì ở dưới rồi chan sauce và rau lên mì

Các loại nấm tươi như - nấm đông cô, nấm sợi, nấm cây dài, nấm oyster loại nhỏ (đầu only) ...

Chowmein in Oyster Sauce with Chicken




This recipe is good enough for our family, if you don't have too many people , please be sure to make less hihi



Need to buy:

3 bag of noodles - made by Southern CA with a picture of CA state
1 bag (2 lbs) beans sprout
2 bunches green onion
1 bunch chives (hẹ)
1 thumb size ginger
Oyster sauce
Soy sauce
Sugar



3 bag of Noodles - spread each bag onto a long large plate, microwave for 1 minute then turn to the other side and microwave for another 1 minute - let cool
In a pan, boil some water - when water is boiled add noodle, stir and count from 1 to 10 - take out noodle run under cold running water until noodles is cleaned . Put some sesame oil and let air dry .


2 bunches of green onion - cut into 1 inch long
1 bunch chives (hẹ) cut into 1 inch long

1 bag (2 lbs) bean sprouts - wash then cook in microwave about 2 to 3 minutes

6 chicken leg quarter - cleansed cut a few lines on top and in the bottom - marinate in seasoning salt (we used our special seasoning - 1 part seasoning salt, 1 part 5 spices and 1 part chinese barbecue char sue) ; onion powder and garlic powder
Just spingle on both side and leave it over night, skin side up

Cornstarch

In a big pan, put some oil to hot, dread chicken in cornstarch on both side then put in the pan, fry both side then take out and put in a rectangle pan bake for another 15-20 minutes broil if nececesary so that the skin of the chicken golden brown .


Sauce to put on noodles

4 Tbsp oyster sauce
2 Tbsp sugar
2 Tbsp water
1-2 Tbps soy sauce

In a big wok put some oil, stir fry onion and chives lightly cooked, then take it out put a little more oil - add noodle stir fry until it looks dry ready to eat, turn heat to low add mixture of oyster sauce to you taste mix well, turn off heat add beans sprout, onion and chives mix well .

Sauce to dip chicken



4 Tbsp water
4 Tbsp sugar
4 Tbsp soy sauce
2 Tbsp vinegar
4 onion dice put in a small bowl, add a little onion microwave about 30 seconds then add to sauce
red pepper
ginger cut in thinny string

Chicken Curry




2 lbs chicken cut in pieces marinate with
1 tsp salt, 1 tsp sugar, 1 tsp chicken seasoning powder, 1 Tbsp onion powder, 1 Tbsp garlic powder --- for at least 1 hour

1 Tbsp oil
2 tsp curry powder
2 tsp curry in oil
1 bag vegetarian curry powder
1 Tbsp chicken seasoning powder
1 Tbsp minced garlic, onion
1 can young coconut juice
1 can coconut milk
4 potatoes - cut in 4 or 6
3 carrot - cut into bite size

In a wok, put in oil , when hot add onion stir fry until fragrant then add chicken, stir fry until cooked,(no more red) add 1 tsp curry in oil and 1 tsp curry powder stir a little . Add coco juice, water to cover chicken then all other seasoning, potato & carrot . Cook until done, be sure to taste it - the taste should be mild not too salty

When potatoes and carrot soft enough, add a can of coconut milk wait until boil then turn off heat - do not cook too long after you put in coconut milk .

Chả Lụa Chay






1 gói tàu hủ ky đông lạnh 16oz
bột nêm nấm, đường, muối - khoảng 1 tsp mỗi thứ
tiêu trắng - tiêu đen cũng được nhưng chả sẽ không được trắng
dầu thắng baro để có mùi thơm của baro

Tàu hủ ky rữa sạch bằng nước nóng hoặc rữa sạch rồi nấu trong nồi nước sôi độ 2 phút

Lấy ra để ráo nước rồi cho lên chảo xào sơ với dầu thơm baro, nêm nếm cho vừa, hơi khô ráo - nhớ đừng làm cháy phần dưới vì như vậy sẽ làm cho tàu hủ ky bị cứng và đổi qua màu vàng . Nếu sợ như vậy thì có thể bóp ráo tàu hủ ky rồi nêm nếm khỏi cần xào .

chia ra làm đôi - khoảng 2 chén each rồi để vô plastic wrap đè mạnh cho tròn và dính vào nhau rồi để hơi nguội . Xếp lá chuối dưới bề dọc, trên bề ngang rồi gỡ nhè nhẹ plastic from tàu hủ ky ra rồi quấn lại cho chặt, nhớ dền hai bên đầu bằng cái chày cho cứng . Wrap lại bằng foil nếu muốn . Lấy cây tăm xâm mấy lỗ vào 2 đầu và ở giữa . Nấu trong nồi nước sôi 1 tiếng rồi gở foil ra, hấp thêm 15 phút nữa .

Để nguội, treo lên cho dồn rồi bỏ vào tủ lạnh , hôm sau hãy cắt ra .

Tôm Kho Tàu / Shrimps





Tôm Kho Tàu


2 lbs Tôm loại lớn/ jumbo shrimp
1/2 hủ riêu tôm/shrimp paste w/ chili sauce (fly dragon brand)
1/2 cup đường / sugar
1/2 cup nước mắm / fish sauce

Marinate shrimps with

1 Tbsp garlic powder
1 Tbsp onion powder
1 tsp seasoning salt
1 tsp tiêu/ black pepper

mix well then add

1 Tbsp constarch - mix well

1 Tbsp olive oil

mix everything together , put in refrigerator , take out to room temperature 15 minutes before cooking .

4 cloves garlic minced
1 hành hương / small red onion minced

Heat wok with oil, stir fry garlic and onion until golden, take out from wok, add a little more oil then add shirmps - stir fry until cooked (do not over cooked the shrimps ) set aside .

In another pan add sugar and fish sauce - cook down until thicken, add shrimp paste stir fry then green onion, black pepper pour mixture into the shrimps cook just a little bit .
