Chicken Noodles Soup

Nelson, Jamie and Jessica are sick, therefore, I decided to make Chicken Soup for them. It turns out Jessice doesn't want to eat it. I don't know about that girl . It is so hard to pleased her. Jamie said thanks mom, I hope she enjoyed it. As for my husband he said It taste pretty good. Don't know if Maivy and Lien enjoyed it or not.

Here is the recipe, this recipe is enough for about 10 people

1 chicken
1 big daikon or Radish - cut in 3 or 4 pieces
6 carrot - 3 cut in 3 and 3 cut into little cubes
1 bunch of celery - cubes
1 bunch onion - thinly slice
1 bunch cilantro - cut in little pieces
2 Tbsp chicken seasoning
1 handful rock sugar
1 Tbsp salt
1 Tbsp fish sauce
2 pieces thumb size ginger
1 onion
***Apple, Artichoke, Cabbage, Jicama, Pear etc... (any of these vegetables/fruit that you have on hand, it will make the broth taste good naturally)

2 boxes of macaroni - cook as directed on the box, drain wash with cold water and pour a little olive oil so that the macaroni won't stick to each other.

Put water in a an 8qt pan bring to boil, when boil but chicken, daikon, 3 carrot in pieces, any vegestable/fruit, chicken Seasoning, Salt, Sugar ... bring it to boil again , when boil lower heat and cook chicken for another 20 minutes, turn oven off and soak chicken for another 30 minutes remember to cover the pot.

Take chicken out of the pot, wait until cool then shred the chicken in long pieces, put back all the bones . Cook another hour or so under low heat after boil. Remember to take out all scum on the way .

Pour the broth through a siever and in a larger pot . Add more water, enough for what you need. Bring it to boil again, add cubed celery and carrot then shredded chicken bring it back to boil once again, add the fish sauce, taste it again, add sugar, salt ... as needed ... to your taste and turn off the heat.

You can either add all macaroni to broth at once or only mix it when ready to eat. I like it this way because I can saved it better and the macaroni won't be so soft.

Remember to put, cilantro, onion and fried onion and black pepper on top.
