Prime Ribs - Jessica's Birthday/Chrismas party

This year, we celebrate Jessica's Birthday and Christmas a bit early to fit everyone's schedule. 

Prime Ribs - I bought marinated rib eye from costco and cooked it as instructed
                      500F  for 25 minutes
                      then lower to 200F about 25 minutes for each pounds -      
                      temperature of meat should be 140F
                      (a bit pink, very tender and juicy, we should buy over 10lbs for our
                       family)

                       *** Costco marinate probably just dry montreal steak rub with
                       cloves of garlic press inside the meat

                      1 pack of button murshroom  (costco)
                      1 box of Hors d'oeuvres  (costco)
                      1 package of marsh potatoes (costco)
                      1 box of salad (costco - not a good idea)
                      2 cans corn
                      1 box of gravy (Trader's Joe)
                      1 package of rib eyes for steak ( nextime just prime rib would be   
                       ok)

                       Cracker and seafood spread or spanish dip would be ok


Next year, we should do the same, since everyone loved it!!!!

Caramelized Spare Ribs / Suon Ram

3 lbs baby back ribs cut into pieces
1/2 cup sugar
1/3 cup fish sauce
1/2 cup water
Green onion cut in pieces
Black pepper

In a frying pan add oil fry both sides of ribs until brown
Wash the ribs so that it is clear of blood pieces
In a pot - put some oil then add ribs stir fry a few minutes than add the sugar, keep  on stirring until sugar a little bit golden, don't burn it ...

Then add fish sauce - keep on stirring about 5 to 10 minutes until the meat absorb the sugar and fish sauce.  Add water and stir again for a few minutes then cover the pot - lower the heat and let it cook until thicken

From time to time open the pot and stir the meat, do not let it burn.

Meat  is done when sauce golden and almost thicken

Add green onion and black pepper

Thit nuong

Gia vi gom^` co'

Xa, toi, hanh` huong bam nhuyen (blender)

soy sauce
chicken powder
a bit of salt

Ga` Roti/ Vietnamese Roasted Chicken

4 chicken legs (poke knife into legs to have good marination)
1 can Coco Rico
1 tsp thick soy sauce
Soy sauce and sugar
Marinate chicken with a bit of 5 spices, salt, black pepper

Heat 2 Tbsp oil, add chiken fry until golden (take out oil if you want) then add garlic then coco water and a bit of thick soy sauce - cook until chicken is cooked and water almost dry up, add soy sauce and sugar as needed .

Dishes from Temple

Tofu kho thom, ca` chua

shredded cu cai xao` shredded tofu (man)

canh khoai mon^(microwave), nam^' ngo` gai

cha trung chien (phu` chuc' , eggs, hanh` xanh and củ hành)

măng xào ớt

cải xanh xào gừng or canh
mít non kho khô and ớt trái loai màu cam, đỏ (not bell pepper)
Lẩu  - rau đọt đậu hoà lan, rau muống, cải cúc, cà chua ...
          tất cả các loại nấm
          khoai môn, bí nhật
          Nước xúp lon or cà rốt, bắp, củ cải trắng, củ sắn, su su ....



Mustard Green with Ginger

Mustard Green cut into bite size
Ginger Shredded
minced garlic and onion
salt, chicken powder, sugar, fish sauce

Boil water with a bit of salt and oil - when boiled add mustard green about 2 minutes then take out (to keep green you can soak in cold water or ice)

Heat 1 Tbsp then add galic, onion until fragrant then add ginger stir a bit then add mustard green -- add a bit of salt, chicken powder, sugar and fish sauce to your taste

Dưa cải chua xào thịt heo quay/ Pickled Green mustard w/ crispy baked pork

Ingredients:

1/2 lbs crispy baked pork/ heo quay
about 1 bowl (1 qt.) pickled green mustard
2 - 3 tomatoes - cut in 8th
Minced - garlic, onion, ginger
1/2 tsp Salt
1 tsp granulated chicken powder
2 Tbsp sugar
1 Tbsp soy sauce
1 Tbsp fish sauce
1/4 cup water
Black pepper
Green onion chopped

In a skillet with medium heat, put in oil then garlic, onion, ginger stir fry until fragrant - add meat then sugar, soy sauce, chicken powder(add a bit of water if needed); then add pickled green mustard stir - cook for an extra 10 - 15 minutes add more sugar or fish sauce add needed.

When done add green onion and black pepper

Wonton Noodle Soup





Egg Spread - Vietnamese style for Bread Spread





Ingredients:

3 egg yolks
about 1/2 cup olive oil
1tsp onion powder
1 tsp garlic powder
1/2 tsp sugar
1/4 tsp salt

Use a hand mixer in low speed, mix the egg yolks in one direction - slowly pour in oil (1-2 tsp at a time) until thicken. When eggs thicken to the consistency you like add onion powder, garlic powder, sugar and salt mix well (taste to see if it ok to your taste)

Store in refrigerator and use it like Mayonnaise

Bánh Tổ (for New Year)/ Sweet Yellow Chewy Cake for New Year





Ingredients

1 package of brown sugar in pieces (about 16 oz)
16 oz glutinous rice flour
pinch of salt
2 cup hot water (divided)
1 piece of ginger (about 2 inches)
sesame seeds - toast in smal oven 350' for about 5 minutes
8 pieces of dry chinese apple (tao' tau`)

1. Skinned ginger then cut into pieces put in the blender with 1 cup hot water, blend it then put through a strainer to get water only

2. put the other cup of water into a pan turn on heat add pieces of sugar until melted

3. In a bowl put glutinous rice flour, sugar water and ginger water together mix well (you can also use the blender (blendtec machine to mix it)

4. You can use any shape of cake pan you want, I use 8 round flan cup (blue one at home) spray oil then add mixture about 2/3 of bowl. Put a piece of chinese apple in the middle then sprinkles sesame on top

5. Use a steamer, steam for 1 hour in medium heat not high (remember to open the lid every 15 minutes , make sure water do not drop inside bowl, set an empty pan next to the steamer to drop water down, then close lid again ( this will make the cake wet, it will not look good or taste good)

Tofu

To make tofu taste better I soak white tofu into marinate water for a few hour or overnight before I fry it for ex - Fried tofu w/ Lemon grass or tofu used as meat for stir fried ect....

Marinate water:

About 4 cups hot water (from water dispenser)
2 tsp salt
2 tsp sugar
2 tsp granulated mushroom bouillon
1 tsp black pepper (about 10 turn of the pepper we have at home)
