Things to remember

Bi` Chay


fried shredded potato - oil must be hot enough , high heat, not to much in pan, don't stir too much

fried shredded taro - oil must be hot enough, high heat, don't stir too much

vegestarian egg roll - roll tight
meat egg roll - do not need to roll too tight

tofu - hot oil, high heat, slight from the outer pan in , do not drop it in the middle oil will splast


A few vegestarian dishes we bought from Tinh Tam^ Chay today 12/19/2010 taste so good. I 'm trying to remember what is in there so I can try to cook it later

Kho - Pinapple cubes, dry vegestarian meat (soak in water then shredded) & cubed fried tofu - sweet & sour taste

Mit' non & fried cubed tofu kho - kho kho^

xao` - shredded cu? cai? man*., lemon grass xa? (thinly slice), fried tofu long thin ot*' kho^ - taste of xa?

cai? chua with tomato & fried tofu stir fried

Squid + tomato + pineapple w/ black pepper (vegetarian) - taste sweet & sour

Fish vegetarian (slice) - cut into 4 pieces fried - kho w/ pineapple

ham chay - cut into big pieces - fried then marinated w w/ 5 spices, xa' xui', coco on low fire - cut to eat w/ bread

Banh' u' - cut strings 5 long fold in half to make 10 string ready to wrap (tide on top)

2 la' banh' u', 1 la' chuoi about 4 - 5 inches - fold into triangle 1 scoop sweet rice + 1 ball green bean + 1 more scoop sweet rice either fold it all down then tied or fold 2 side tide la' left over on side

sweet rice soak at least 5 hours mix with sugar + salt + oil + cooked peanut mix well

green bean cooked add salt and pepper to tast make into small ball about size of a meat ball

Deep Fried Banana

6 banana
200 gr rice flour
1 tsp baking soda
200 ml water
100 ml coconut milk
50 gr sesame
3 Tbsp sugar
50 gr coconut pulp

Pumpkin with Custard

1 small pumkin
8 eggs
16 Tbsp coconut cream
8 Tbsp palm sugar
1 pinch of sal
4 pandan leaves shreeded

steam 30 - 40 minutes


Vegetarian Fish Sauce

1/4 cup sugar
3/4 cup water
3 Tbsp lemon juice
3 Tbsp light soy sauce

Shaky Beef Sauce

1/2 cup oyster sauce
3 Tbsp hot water
2 tsps sesame oil
2 tsps sugar

Salt Pepper & Lemon Sauce

2 Tbsp lemon juice
1/2 tsp salt
1 tsp white pepper


Red Rice

3/4 cup Rice
4 Tbsp butter
1 tsp ground garlic
2 Tbsp tomato paste



Tamarine Sauce

4 1/2 once tamarine paste with seeds
1 1/2 cup boiling water
3/4 cup plum sauce
3/4 cup oyster sauce
1 cup sugar


Dressing for Beef salad (goi? bo`)

1/3 cup grated palm sugar
1/4 cup lime juice
2 Tbsp fish sauce
2 Tbsp soy sauce
1 glove garlic
1 Tbsp chili oil
1 Tbsp slice lemon grass (white only)
1 small handful cilantro
2 Tbsp olive oil
